Vegetarian Stuffed Peppers

Ingredients for stuffed bell peppers

Here’s a veggie twist on stuffed bell peppers. It’s pretty tasty. I would recommend giving it a try. I have a short video of the recipe posted on my Instagram.

Ingredients:

  • 1 medium yellow onion

  • 1 14.5 oz can of fire roasted tomatoes

  • 2 tablespoons of tomato paste

  • 1/2 package of Impossible ground meat

  • 1/2 can of black beans

  • 1/2 can of diced tomatoes

  • 6 bell peppers

  • 2 handfuls of baby spinach

  • 2 tablespoons of olive oil

  • 1/2 cup of rice

  • 1/2 tablespoon of salt

  • 1 teaspoon of ground pepper

  • 1 tablespoon of oregano

  • 1/2 tablespoon of hamburger seasoning

  • 4 cloves of garlic

Directions

  1. Rinse and use paper towel to dry spinach and bell peppers

  2. Preheat oven to 400 degrees fahrenheit

  3. Chop onion into bit sized pieces, chop off the tops of bell peppers remove seeds, and cut bottom of bell peppers so they are stable, mince garlic

  4. Cook rice according to package directions

  5. Heat pan on medium-high, add olive oil to the pan

  6. Add onion to the pan and saute until translucent

  7. Add garlic and tomato paste to pan stir and cook for 3 to 4 minutes until it becomes fragrant

  8. Add Impossible burger and hamburger seasoning cook until brown

  9. Add black beans, stir cook for 2 min

  10. Add spinach, mix

  11. Season rice with salt and pepper

  12. Add rice, fire roasted, diced tomatoes and rice. Season mixture with salt, pepper, and oregano. Cook until most of the liquid from tomatoes has been absorbed

  13. Put peppers in a baking dish and spoon cooked mixture into peppers

  14. Optional add vegan cheese to top

  15. Cover with aluminum foil and bake for approx 30 min

  16. Remove from oven and enjoy

Makes approximately 6 servings
